About Us

Born from the family behind 380 Peruvian Bistro, Red Dot Cevichery & Oyster Bar came to life in the middle of a storm—during a time of uncertainty, delays, and waiting on city permits that kept our 380 Peruvian Bistro from making food. This setback became our turning point. Instead of stopping, we leaned into what we could do best: an American-Peruvian Gulf Coast passion for fresh seafood, building a concept around a live cevichery and raw bar where everything is made to order, right in front of you. The vision had always been there—a cold bar and a hot bar, ceviche and oysters on one side, stir-fries and tradition on the other—but in that moment, the cold bar took the lead and The Redot was born. Inspired by Captain David’s love for fishing, the strength and vision of his Peruvian wife, Sailor Seabass holding it down, and Mama Rita’s recipes passed down through generations, every dish carries a story of resilience, culture, and flavor. From Gulf Coast oysters to citrus-bright ceviche with our signature leche de tigre, this is more than a restaurant—it’s what came out of the storm.

Mama Rita

Co-owner and the reason it all works—there’s no Redot without Mama Rita. Mother of Klaudia and Sailor Seabass, she keeps everyone in check and holds it all together. A full-time working grandma with endless talent, her touch is everywhere—from her little shop inside La Calle to the details across the space. But at the end of the day… ceviche is the key to her heart.

Owners of La Calle Food Hall, Captain David and Klaudia share a passion for building concepts and experiences—blending his background in remodeling and love for fishing with her strength in restaurant operations.

Red Dot was born during the upgrade of 380 Peruvian Bistro’s kitchen hood, when the bistro temporarily couldn’t cook. Instead of stopping, they pivoted.

Inspired by David’s passion for fishing and the Red Drum, The Red Dot came to life—built on a simple vision:
a hot bar and a cold bar.

At the front, 380 Peruvian Bistro serves bold, traditional Peruvian hot dishes.
At the back, The Red Dot delivers fresh, vibrant ceviches made right in front of you.

SAILOR SEABASS

The engine behind the scenes and the calm in the middle of the storm. Sailor Seabass runs the flow of The Red Dot—from inventory to execution—making sure every plate that leaves the bar lives up to the standard. Brother to Klaudia and right hand to Mama Rita, he’s been part of the grind since day one. Quiet, sharp, and always ten steps ahead, he’s the one making sure the chaos actually works. While Captain Dave brings the story and Mama Rita brings the soul. Seabass makes sure it all runs.
